This tricky word means that heather honey remains jelly-like in the jar. High-quality heather honey can be distinguished by its dark amber colour, which leans towards red or orange, and the large number of air bubbles trapped in it.

Organic Heather honey has a sharp fragrance that combines fruity and woody scents. Its flavour is mildly sweet with a sharp aftertaste.

Compared to other types of honey, organic heather honey has the highest content of phenolic acids, which protect the body’s cells from the effects of free radicals.
