Forest Honey
Forest honey is the only variety of honey that is produced not from flower nectar, but from honeydew collected from both deciduous and coniferous trees. The colour varies from dark brown to rosy. It has a sticky and viscous consistency. The flavour is moderate, lingering, moderately sharp, and slightly sweet. It is not at all bitter and has a mild aroma. It hardly ever crystallises, and never completely so, remaining a thick or creamy and soft consistency.

Oligosaccharides are prebiotics that have a positive effect on the digestive tract bacteria. Due to its high fructose level and a low glucose level, this honey is resistant to crystallisation.
