Heather Honey

Heather Honey

Heather honey has a dark yellow colour with a pinkish or brownish tinge and a pleasant fragrance of heather flowers. Its flavour is both mildly bitter and sweet. This honey is very thick and has a long crystallisation process.

This is one of the best varieties of honey, but you may not have encountered it yet. It’s like a Rolls Royce of honey. The most interesting property of real heather honey is that it’s thixotropic. This tricky word means that heather honey remains jelly-like in the jar. High-quality heather honey can be distinguished by its dark amber colour, which leans towards red or orange, and the large number of air bubbles trapped in it.

Heather honey has a sharp fragrance that combines fruity and woody scents. Its flavour is mildly sweet with a sharp aftertaste.

Compared to other types of honey, heather honey has the highest content of phenolic acids, which protect the body’s cells from the effects of free radicals. It can be beneficial when treating heart diseases and cancer. Heather honey is also beneficial for its antibacterial and antimicrobial properties.

Heather honey is particularly difficult to harvest from the honeycomb due to its thick consistency. Special extractors and presses are used to properly spin it out. The entire production process is highly complex and labour-intensive.
